Quick Smoky-Flavored Chili with Blue Cheese

Your house will instantly be filled with the aroma of smoky chili as soon as you start simmering the meat, beans, chilies, and tomatoes. When the weather chills, this recipe will warm your family inside out. Add it to your weekly meal rotation…leftovers are delicious when remixed into tacos and nachos!

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 pounds ground beef, or substitute ground turkey
  • 1 large onion, chopped
  • 4 large cloves garlic, chopped
  • 1 tablespoon chili powder
  • 2 teaspoons blackening seasoning, or substitute Creole seasoning
  • 2 chipotles in adobo, chopped, or substitute ½ cup hot chipotle salsa
  • 1 (12 ounce) Mexican style beer
  • 2 cups vegetable stock, or substitute chicken stock
  • 1 (28 ounce) can chopped stewed tomatoes
  • 1 (15.5 ounce) can dark red kidney beans, drained
  • 2 (10 ounce) containers Treasure Cave® Blue Cheese
  • Salt, to taste
  • Black pepper, to taste

Directions

Heat a deep skillet or wide pot over medium-high heat.

Add oil and ground beef or turkey. Crumble meat as it cooks, about 5 minutes.

Add onions, garlic, chili powder, blackening season, and chipotle. Cook another 5 minutes.

Add beer and cook while stirring to loosen any bits from the bottom of the pan.

Add the stock, tomatoes, and beans and bring to a bubble.

Reduce heat and simmer 10 minutes. Taste and adjust seasoning.

Ladle into bowls. Top with a hearty helping of Treasure Cave® Blue Cheese.

Serving Tip:
Serve in tortilla shell bowls. Preheat the oven to 350°F. Spray flour tortilla shells with cooking spray and sprinkle with blackening seasoning. Place in a boat-shaped oven-safe cooking vessel (a mini loaf pan works best) and press towards the corners. Bake until it is crunchy and takes the shape of your pan, about 10 minutes.
