Add gin, dry vermouth, lavender syrup, and lemon juice to a cocktail shaker. Add ice and shake until the shaker becomes cold and frosty.
Strain into a Collins glass filled with fresh ice. Top off with a float of Prosecco and garnish with a lemon wheel and sprig of lavender.
Lavender Syrup Recipe:
Combine 1 cup white sugar, 1 cup water, and 1 tablespoon fresh lavender blossoms (you can also use a tsp of dried blossoms found in many health food stores) in a small pot set to medium-high heat. Bring syrup to a boil, reduce heat, and stir while the mixture simmers for 1 minute or until sugar dissolves. Remove pot from the heat and let it steep for 20 minutes. Strain out solids and use or store the mixture in the refrigerator.
