These Sweet Corn Feta Fritters are easy to make and are loaded up with fresh corn, fresh veggies, flavor, and most importantly feta cheese. Dip into Ricotta Dill Sauce and enjoy the taste of Summer!

Yield: 17 each; ¼ cup scoop
In a large bowl, stir together corn kernels, carrots, scallions, red peppers, ¾ cup of Frigo® Crumbled Feta Cheese, and shredded Frigo® Fresh Mozzarella.
In a separate bowl, whisk together eggs and then slowly whisk in all-purpose flour, cornmeal, and spices until thoroughly combined.
Finally, stir the egg mixture into the corn mixture.
Heat a large cast iron pan with ½-inch of oil and scoop the batter into the hot oil with a ¼ cup ice cream scoop.
Working in batches, fry fritters until cooked through and golden brown on both sides, about three minutes per side, turning once. Remove and place on a paper towel-lined plate.
Make the Ricotta Dill Dipping Sauce by mixing all ingredients in a food processor or blender and blend until smooth. Taste and adjust salt and pepper to taste.
Serve the fritters garnished with the remaining Frigo® Crumbled Feta Cheese and the Ricotta Dill Dipping Sauce on the side.
