Slow Cooker Cheesy Spinach Artichoke Dip

Make this hot and cheesy artichoke dip in a slow cooker it is perfect for your next game day make-ahead appetizer!

Ingredients

  • 1 (15-ounce) container Frigo® Whole Milk Ricotta Cheese
  • 1 (8-ounce) package Frigo® Fresh Whole Milk Mozzarella Cheese, shredded
  • 1 (5-ounce) container Frigo® Shredded Parmesan Cheese
  • 1 (8-ounce) package low-fat cream cheese
  • 2 (14-ounce) cans whole artichoke hearts, drained
  • 1 (10-ounce) bag frozen chopped baby spinach, thawed
  • ½ cup mayonnaise or whipped salad dressing
  • ½ cup finely chopped red onion
  • 1 tablespoon minced garlic
  • 2 teaspoons Creole or Cajun seasoning

Directions

Turn slow cooker to high.

Prep all of the ingredients and combine in a large mixing bowl.  Beat with a hand mixer on high until spinach and artichoke hearts are broken apart and cheese is smooth.  

Scrape mixture into slow cooker and cook on high for 1 ½ hours or until the dip is completely warmed through and the cheese is melted.  Give the dip a good stir, taste, and add more Creole or Cajun seasoning to taste.

Turn slow cooker to warm and allow guests to help themselves to bowls of warm Cheesy Spinach Artichoke Dip accompanied by crackers, chips, bread, or veggies.

Rad Tip:  Need to entertain on the fly?  Bake Cheesy Spinach Artichoke Dip in a lightly greased 9-inch x 13-inch baking dish in a preheated oven set to 400°F for 35 minutes or until the top is golden brown and the dip is bubbling.
