Shrimp and Sausage Mac ’n’ Cheese is a Cajun remix of Mac and Cheese. It is a super creamy, cheesy and decadent dish punctuated with spices, andouille sausage, and shrimp.

Yield: 11-inch x 15-inch (5 quart) casserole or 12-inch cast iron skillet
Heat oven to 375° F. Lightly oil a deep 11-inch x 15-inch (5 quart) casserole dish or cook and bake in a deep 12-inch oven-proof skillet.
In a large skillet, cook 4 tablespoons butter, diced onion, and sausage over medium heat until sausages are lightly browned, about 2 minutes. Add red, yellow, and green bell peppers; cook until tender, about 6 minutes. Sprinkle with flour and Cajun seasoning; cook, stirring constantly, for 2 minutes.
Gradually add milk and cook, stirring occasionally, until thickened and bubbly. Reduce heat to low, add shredded Frigo® Fresh Mozzarella Cheese and Frigo® Whole Milk Ricotta Cheese, and cook, stirring constantly, until cheese is melted and the mixture is smooth. Remove from heat and add cooked pasta and shrimp, stirring gently to combine.
In a medium-sized bowl, mix Frigo® Shredded Parmesan Cheese, seasoned panko breadcrumbs, chopped fresh parsley, and remaining butter.
Transfer the macaroni and cheese mixture to the prepared casserole, if using. Top the macaroni and cheese with the Frigo® Shredded Parmesan Cheese and breadcrumb mixture. Pop into the oven and bake for 15 minutes, or until hot and bubbly. Turn the oven to broil and brown the top for about 4 minutes.
