Pfeffernüsse Cookies

German Pfeffernüsse “pepper nut” Cookies are powder sugar-coated black pepper and holiday spices spiced gingerbread-esque treats.  These yummy morsels are delicious served alongside a hot cup of coffee while you listen to Christmas carols!

Prep Time:  20 minutes

Refrigeration Time:  1 hour

Cook Time:  10-12 minutes

Yield:  4 dozen; 1-inch cookies

Ingredients

  • ¼ cup butter flavored shortening
  • 1 cup brown sugar, packed
  • 1 large egg
  • ¼ cup dark molasses
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon Chinese 5 spice powder
  • ¼ teaspoon salt
  • 3 - 4 cups powdered sugar, garnish

Directions

In a large mixing bowl fitted with a paddle beat together the shortening, brown sugar, egg, and molasses until a fluffy consistency, about 3 minutes. Blend in the remaining ingredients except for the powdered sugar until fully incorporated.

Cover and chill in the refrigerator for 1 hour.

Heat oven to 375°F. Prepare baking sheets by lightly greasing with cooking spray.

Shape dough by rounding a teaspoon full of dough into balls between your hands. Place balls on prepared cookie sheets and slightly press down with thumb so balls don’t roll away. Place about 3 inches apart. Bake 10 – 12 minutes or just until the cookies are set. The cookies will be crispy on the edges but soft in the center.

Immediately remove from baking sheet and allow to cool slightly.

When cool enough to handle roll in powdered sugar and serve!
