O Tennenbaum-totaler | Chef Driven Mocktails

O Tennenbaum-totaler is a non-alcoholic holiday cocktail crafted with hints of Pear, Hawthorn, Douglas Fir, and a bright hint of acid from the Icewine Aceto and lemonade.

Prep Time: 5 minutes    

Yields: 1; 6-ounce cocktail

Glassware: rocks glass



  • 2 ounces lemonade
  • 2 ounce PriSeco Organic Cuvee no. 25 [most]-Pear Hawthorn & Douglas Fir
  • ¾ ounce Niagara’s Icewine Aceto
  • Lemon peel, garnish
  • Sprig of Douglas Fir or rosemary, optional garnish


Fill a mixing glass with ice. Add lemonade, Jörg Geiger’s PriSecco, Icewine Aceto, rosemary leaves.

With bar spoon, stir until chilled, about 30 seconds. Strain into a rocks glass full of crushed ice.

Express lemon peel over the drink and add peel to the glass as a garnish. Garnish with a sprig of Douglas Fir or rosemary and serve.
