Mediterranean Feta Pizza

Mediterranean Feta Pizza is a crispy pizza piled high with bubbly cheese and piled high with Mediterranean-style toppings. The unexpected treat is the sweet and savory seasoned crust!

Ingredients

Pizza Ingredients:

  • 1 prepared pizza dough or pizza dough recipe
  • 1 (5-ounce) container Frigo® Crumbled Feta Cheese, divided
  • ¾ cup marinara sauce
  • 2 tablespoons olive oil
  • 2 ounces deli sliced salami, sliced in thin strips
  • ¼ cup cherry tomatoes, halved
  • 4 baby artichokes hearts, halved
  • ¼ cup Kalamata olives, halved
  • ¼ cup cooked chickpeas, drained
  • ¼ small red onion, thinly sliced

Crust Toppings:

  • 1 tablespoon honey
  • 1 tablespoon fresh rosemary, minced
  • ½ teaspoon red chili flakes
  • 1 tablespoon onion flakes
  • ½ teaspoon sea salt
  • Salt and fresh ground black pepper, to taste

Directions

Preheat oven to 400° F.  Move baking rack to bottom of oven.

Allow prepared dough to come to room temperature as per package directions. 

Meanwhile, in a small bowl, mix half of the 5-ounce container of Frigo® Crumbled Feta Cheese with the marinara sauce.  Reserve to side with prepared toppings. 

Lightly flour a cutting board or flat work station. With your hands or rolling pin, gently stretch or roll out the dough to a 16-inch pizza round.  Place dough on a lightly greased pizza stone or baking sheet and brush with the olive oil.

Top the pizza.  Start by layering the pizza with the Frigo® Crumbled Feta Cheese sauce mixture, then the salami slices, tomatoes, artichokes, Kalamata olives, chickpeas, red onion, and the other half of the container of Frigo® Crumbled Feta Cheese.  Sprinkle salt and fresh ground black pepper over the top of the entire pizza. 

Finish the pizza by brushing the crust with the honey and then sprinkle with fresh rosemary, onion flakes, red chili flakes, and sea salt. Place pizza in the oven and bake for 16 – 20 minutes or until crust is done and toppings are sizzling.

Cut into 4, 6 or 8 slices. Serve warm and enjoy pizza night to the fullest!
