Ingredients

  • 1 tablespoon unsalted butter
  • 5 Everything Bagels, cut into 1-inch cubes
  • 2 (5-ounce) Frigo® Crumbled Feta Cheese, divided
  • 10 large eggs
  • 1 ½ cups whole milk
  • 1 (16-ounce) ball Frigo® Fresh Mozzarella, small diced
  • 1 (8-ounce) packaged smoked salmon, cut into roughly 1-inch pieces, pieces separated
  • ½ cup thinly sliced green onions, divided
  • ¼ cup chopped dill, divided
  • 1 tablespoon Everything Bagel seasoning*
  • *Or, substitute mixture of dried minced onion, sesame seeds, poppy seeds, dried minced garlic, and black pepper
  • Pickled red onion, reserved for garnish
  • Capers, reserved for garnish

Directions

Butter an 11-inch x 7-inch baking dish and fill with the cubed bagels.

In a large bowl, whisk together 1 container Frigo® Crumbled Feta Cheese, eggs, and whole milk until well incorporated.

Stir in Frigo® Fresh Mozzarella and fold in two-thirds of the smoked salmon, green onions, and chopped dill, reserving the remaining third of the toppings for later. Sprinkle in Everything Bagel seasoning. Stir again to evenly incorporate.

Pour mixture evenly over the cubed bagels. (You may need to push the bagels down into the liquid to make sure most of the pieces are soaked through.) Sprinkle the strata with remaining Frigo® Crumbled Feta Cheese and reserved toppings, cover with foil, and refrigerate until ready to bake. Make-Ahead Tip: Prepare the strata ahead of time, wrap in foil and then overwrap in plastic wrap, and refrigerate for up to 2 days or freeze for up to a month.

When ready to bake, heat the oven to 350°F and bake for 20 minutes.

Remove the foil and bake for another 20 minutes. Check on it often to make sure the cheese isn’t burning (it should be golden brown). To test for doneness, remove the pan from the oven and insert a knife. If it comes out clean, it’s done.

Garnish with pickled red onions and capers. Let it rest for a few minutes and serve while warm.
