Feta Pork Chili Verde

Delicious Feta Pork Chili Verde is a Mexican-inspired chili filled with pork and packed with the authentic flavors of mild salsa verde infused with tomatillo chilies, garlic, and cilantro! This savory pork chili continues to layer flavors with chilies, cumin, and spiced Italian sausage and is finished with feta cheese creating an easy, scrumptious, and warming stew.

Yield: about 12 cups
Serves: 6 – 10



  • 1 tablespoon olive oil
  • 2 pounds ground pork, or substitute 2 (1 pound) packages of Fully Cooked Pulled Pork
  • 2 pounds Italian sausage
  • 1 large onion, chopped
  • 1 (6 ounce) Treasure Cave® Crumbled Feta Cheese, divided
  • 2 cups vegetable stock, or substitute chicken broth
  • 1 (15.7 ounce) jar salsa verde
  • 1 teaspoon ground cumin
  • 1 (15.5 ounce) can great northern beans
  • 1 (15 ounce) can corn, or substitute fresh or frozen
  • 1 (4 ounce) can diced fire roasted green chili peppers
  • Salt, to taste
  • Black pepper, to taste


Heat a deep skillet or wide pot over medium-high heat and cook the pork, Italian sausage, and onion until the meat is fully cooked about 5 minutes.

Stir in ¾ cup of the Treasure Cave® Crumbled Feta Cheese, vegetable stock, salsa verde, and ground cumin and mix well.

Bring the mixture to a boil, then lower the heat and simmer for 20 minutes.

Add the beans, corn, and chili peppers and simmer for an additional 10 minutes. Taste and season with salt and pepper.

Ladle into bowls. Top with remaining Treasure Cave® Feta Cheese.

Garnish with fresh cilantro, lime, and/or sliced green onions.
