Cut the passion fruits in half and use a bar spoon to scrape their pulp into a rocks glass. Pour Dark Chocolate Rum, passion fruit juice, and Tropical Simple Syrup into rocks glass filled halfway with ice. Stir with a bar spoon and then top with ice.
Finish by pouring the red blood orange juice over the cocktail and garnish with half of a passion fruit, citrus leaves, and shaved chocolate.
Tropical Simple Syrup: Heat ½ cup maple syrup and ½ cup pineapple juice together in a sauce pot. Whisk in ½ tablespoon ground cinnamon, ½ teaspoon ground ginger, and ¼ teaspoon dried chili powder. Heat until dissolved. Cool and use as desired.
