Grilled Salmon with a Honey Mustard Feta Sauce

The bold, sweet and tangy honey mustard feta sauce elevates this easy salmon dinner to gourmet! You will soon find that this quick fish dinner will have a regular spot in the weeknight rotation.

Ingredients

Salmon:

  • 4 (1/2 pound) pieces of salmon, with skin, rinsed and patted dry
  • 2 tablespoons olive oil
  • Salt and black pepper
  • ½ cup Frigo® Feta Cheese Crumbles
  • 1 tablespoon fresh dill leaves

Honey Mustard Feta Sauce:

  • ¾ cup Frigo® Feta Cheese Crumbles
  • ½ cup mayonnaise
  • ¼ cup Dijon mustard
  • ¼ cup honey
  • ¼ cup minced fresh dill
  • 4 cloves garlic, peeled and crushed
  • 1 lemon, juice and zest
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon black pepper

Directions

Heat a grill to medium heat or heat oven to 375°F.

Prepare your sauce in a food processor or blender by adding all the Honey Mustard Feta ingredients and pulsing until smooth. Divide in half and set to the side.

Rinse the salmon with cold water and pat dry with paper towels. Drizzle with olive oil and sprinkle lightly with salt and black pepper. Then, line a large baking sheet with a sheet of aluminum foil. Mist the foil with cooking spray and lay out the salmon in the middle of the foil.

Spoon half of the honey mustard feta sauce on top of the salmon and spread it around so that it evenly covers the top of the salmon.

Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed. Crimp foil together.

Grill or bake for 12-14 minutes or until the salmon is almost completely cooked but still slightly pink in the center. Remove the salmon from the grill or oven and carefully open the foil packet. Pull back the aluminum foil so that the top of the fish is completely exposed.

If cooking on a grill, turn to high and continue to grill for 3-4 minutes until the fish is cooked to desired doneness.

If cooking in the oven, change the oven setting to broil, return to the oven, and broil for 2-3 minutes or until the top of the salmon is lightly browned but not burned.

Remove salmon from the grill or oven. Top with the remaining sauce, sprinkle with Frigo® Feta Cheese Crumbles and fresh dill.

Serve on top of vegetables and dig in!
