Fresh Feta Ricotta Dips

Whip up these Fresh Feta Ricotta Dips for easy appetizers in just minutes.  By simply blending ricotta cheese and feta cheese together with sweet and spicy combinations of herbs and spices and then finishing with a drizzle of olive oil and honey, you will have an instant centerpiece for your cheeseboard that satisfies all your guests’ taste preferences.

Ingredients

Ricotta Feta Dip Base:

  • 1 (15-ounce) Frigo® Whole Milk Ricotta Cheese
  • 2 (5-ounce) Frigo® Crumbled Feta Cheese

Sweet Dip :

  • 1 orange, juice and zest
  • 4 sprigs of fresh thyme, leaves removed
  • 2 teaspoons honey
  • ¼ teaspoon ground cardamom
  • 2 tablespoons honey, reserve for serving
  • Optional garnishes: Extra crumbled feta, chopped walnuts, honey, freshly cracked black pepperand/or fresh herbs

Spicy Dip:

  • 1 (4 ounces) jar chopped pimentos, drained
  • 2 tablespoons chopped pepperoncini
  • 1 ½ tablespoon red wine vinegar
  • 1 small clove garlic, minced
  • ½ teaspoon harissa spice blend, or substitute ¼ teaspoon crushed red pepper flakes (or more, to taste)
  • 2 tablespoon olive oil, reserve for cooking
  • Optional garnishes: Extra crumbled feta, harissa, crushed red pepper flakes, chopped olives, and/or olive oil

For Serving:

  • Toasted bread
  • Crackers
  • Assorted vegetables, sliced
  • Assorted fruit, sliced

Directions

Make the dip base by dividing the Frigo® Whole Milk Ricotta Cheese into two medium bowls. Fold one container of Frigo® Crumbled Feta Cheese (reserve Feta containers to side) into each bowl.

Using a hand mixer on the lowest speed, mix the cheeses together. Once the feta and ricotta are combined, adjust the mixer to medium speed and whip until the cheese is soft and fluffy.

In one bowl, add all the spicy dip ingredients and, in the other bowl, add the sweet dip ingredients. Mix on medium to incorporate the ingredients.

Scrape the spicy dip into one Feta cheese container and the sweet dip into the other container. Press and smooth the dips in the containers with a small off-set spatula.

Carefully scrape the off-set spatula around the inside of the Feta container to loosen dip and turn the dip out onto a serving dish (similar to making a sandcastle).

Garnish Sweet dip with a drizzle of honey and any of the optional ingredients and garnish the spicy dip with a drizzle of olive oil and any of the optional ingredients.

Serve with toasted bread, olives, charcuterie, nuts, vegetables, fruits, bread, crackers, and other delicious accouterments for dipping.
