Smokin’ Hopstail

Smokin’ Hopstail is a grilled beer cocktail finished with Mezcal and lime.  Think of it as a Bloody Maria inspired by summer grilling!

Prep Time: 5 minutes    

Cook Time:  2 minutes

Yields: 1; 8-ounce cocktail

Glassware: Collins glass or pint glass

Ingredients

  • 1 ounce Mezcal
  • 1 lime, halved
  • 2 dried Guajillo chili peppers, cut open, stems and seeds removed
  • 1/2 ounces agave nectar, or substitute honey
  • 3 ounces West Coast Style IPA, suggest Fat Head’s Head Hunter

Directions

Heat grill to medium-high. While grill is heating, toast chilies using tongs, turning frequently, until pliable and fragrant, about 2 minutes. Do not char or burn the chilies.

In a shaker glass add toasted Guajillo with the agave nectar and muddle until broken up. Add Mezcal, juice from half of lime and ice. Shake and strain into a Collins glass over ice. Top with IPA. Garnish with lime.
