Ingredients

  • 1 tablespoon olive oil
  • 4 green onions, cleaned and chop as desired
  • 5 ounces mushrooms, cleaned and sliced
  • 6 – 12 ounces Andouille chicken sausage, sliced
  • 1 cup Swiss chard or spinach, rough chopped
  • 1 tablespoon dried Italian seasoning
  • 12 eggs, beaten
  • 1 (5-ounce) container Frigo® Crumbled Feta Cheese
  • Salt and pepper, to taste

Directions

Preheat oven to 350° F.

Heat 1 tablespoons olive oil in a 12-inch ovenproof sauté pan on medium high heat. When the oil is hot add the green onions and mushrooms and cook until onions are soft and fragrant. Add Andouille chicken sausage, Swiss chard, garlic and Italian seasoning, cook for an additional 3- 4 minutes or until Swiss chard is wilted and the sausage is seared slightly.  Remove from heat.

Pour egg mixture over the sautéed mixture, season with a pinch of salt and black pepper, and stir in the Frigo® Crumbled Feta Cheese.

Place pan in oven and bake for 15-20 minutes, or until a toothpick inserted in the middle comes out clean. Let cool before serving.
