Feta Cheese Frittata

Frittatas are in between an omelet and a quiche and can be served for breakfast, brunch, lunch, or dinner! This frittata will fill your mealtime line up because it is packed full of deliciousness – sweet green onions, savory sauteed mushrooms, smokey andouille sausage combined with the earthy Swiss chard whipped in eggs finished with bright rich punctuations of feta.

Serves: 4 – 6

Ingredients

  • 1 tablespoon olive oil
  • 4 green onions, cleaned and chop as desired
  • 5 ounces mushrooms, cleaned and sliced
  • 6 – 12 ounces Andouille chicken sausage, sliced
  • 1 cup Swiss chard or spinach, rough chopped
  • 1 tablespoon dried Italian seasoning
  • 12 eggs, beaten
  • 1 (5-ounce) container Frigo® Crumbled Feta Cheese
  • Salt and pepper, to taste

Directions

Preheat oven to 350° F.  

Heat 1 tablespoons olive oil in a 11.5-inch ovenproof fry pan on medium-high heat. When the oil is hot add the green onions and mushrooms and cook until onions are soft and fragrant. Add Andouille chicken sausage, Swiss chard, garlic, and Italian seasoning, cook for an additional 3- 4 minutes or until Swiss chard is wilted and the sausage is seared slightly.  Remove from heat.

Pour egg mixture over the sautéed mixture, season with a pinch of salt and black pepper, and stir in the Frigo® Crumbled Feta Cheese.

Place pan in oven and bake for 15-20 minutes, or until a toothpick inserted in the middle comes out clean. Let cool before serving.
