A refreshing summer cooler with coconut, lime, and mint is a classic combo. Oh so tropical and satisfying! Sip on this delightful twist of a classic mojito.
Prep Time: 5 minutes
Yield: 1 (8-ounce) cocktail
Glassware: Collins glass
In shaker add mint leaves and lime juice and zest. Muddle until leaves are bruised.
Add ice to shaker then pour in the silver and coconut rum and simple syrup. Shake the drink until the shaker is frosty and drink is chilled through.
In a Collins glass packed with ice strain drink over, top with soda water, and garnish with a sprig of mint.
For some extra kick, try adding some sliced jalapenos!
Having a party and need to make a large batch?
Increase to 2 liters of rum, ½ cup coconut rum, 1 cup simple syrup, a bunch of mint-infused into simple syrup and 4 limes zested and juiced.
