Three Cheese Grits

This cheesy Breakfast of Champions with a Southern flair can arrive on your breakfast table within 20 minutes! Three Cheese Breakfast Grits is a creamy, savory breakfast punctuated with fresh cracked black pepper that can be served as a main or side dish. For an amped-up version, serve topped with eggs, bacon, sausage, cajun shrimp, slices of steak, onions, mushrooms, and/or other meaty proteins!

Ingredients

  • 3 cups water
  • ½ teaspoon salt
  • ½ teaspoon fresh cracked black pepper plus more for garnish
  • 1 bay leaf
  • ½ cup corn grits (not instant)
  • ¼ cup Frigo® Whole Milk Ricotta Cheese
  • ¼ cup Frigo® Fresh Mozzarella Cheese, shredded
  • ¼ cup Frigo® Fresh Shredded Parmesan Cheese plus more for topping
  • ¼ cup whole milk

Directions

In a heavy-bottomed medium-sized saucepan, heat 3 cups water, salt, black pepper, and bay leaf until it comes to a boil. When boiling, stir in corn grits and reduce heat. Cook slowly for about 5 minutes, stirring occasionally.

Stir in Frigo® Whole Milk Ricotta Cheese, shredded Frigo® Fresh Mozzarella Cheese, shredded, and Frigo® Shredded Parmesan Cheese. Continue to cook while stirring until cheese is melted through.

Remove from heat and stir in whole milk. Spoon into a large bowl and sprinkle with fresh ground black pepper and Frigo® Fresh Shredded Parmesan Cheese.

For an amped-up version, serve topped with eggs, bacon, sausage, cajun shrimp, slices of steak, onions, mushrooms, and/or other meaty proteins!

Use your slow cooker to make this an easy cook-while-you-sleep recipe! These creamy grits will be ready for breakfast when you wake up. Mix the above ingredients with an additional 3 cups of water in a greased 6-quart crockpot and cook on low for 7 hours.
