Breakfast Power Waffles

Start your day off right with these delicious protein-packed waffles!  This waffle recipe combines a whole bunch of really good stuff like creamy whole milk ricotta cheese making these waffles fluffy, a banana that sweetens and adds flavor, and peanut butter that adds loads of flavor and protein.  Enjoy this as your go-to breakfast of champions!

Cook Time: 15 minutes

Yield: about 4 (7-inch) waffles

Ingredients

  • ½ cup Frigo® Whole Milk Ricotta Cheese
  • ½ cup coconut milk, or whole milk, almond milk, cashew milk
  • ¼ cup coconut oil
  • 1 large banana
  • 3 large eggs
  • ¼ cup peanut butter
  • ¼ cup light brown sugar
  • 2 teaspoons pure vanilla extract
  • 1 3/4 cups unbleached, all-purpose flour, or whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Directions

Preheat a waffle iron according to the manufacturer’s instructions.

Prepare the batter in a food processor fitted with a blade or a blender and pulse together the Frigo® Whole Milk Ricotta Cheese, milk, coconut oil, banana, eggs, peanut butter, brown sugar, and vanilla extract until all ingredients are evenly incorporated, 1 minute. Be sure to scrape down the sides in between pulses.

In a small mixing bowl whisk together all-purpose flour, baking powder, and salt.

Slowly add the dry ingredients to the blender and pulse together until just combined, being careful not to overmix. At this time, pour in any additional add-ins and pulse until just incorporated.

Cook the waffles by spooning or pouring the batter into the hot waffle iron and cook according to the manufacturer’s instructions, about 2 to 3 minutes (You will need about 2/3 cup of batter per waffle). Remove hot waffle from waffle iron and top with favorite toppings!

Optional:

Add-ins: 2 tablespoons chia seeds, flaxseeds, and/or nutritional yeast, ¼ cup chocolate chips, ¼ cup pumpkin puree or applesauce, ½ cup chopped fruit

Rad Tip: To keep the waffles warm when making a big batch, place a baking rack on a baking sheet and arrange the cooked waffles in a single layer on it. Place in a 200°F oven to keep warm.

Rad Remix:  Make savory by omitting banana, peanut butter, and vanilla extract and mix in1 cup. of mashed potatoes and a teaspoon of fresh ground black pepper.  Add 1/2 cup of minced chives or scallions for an extra pop of flavor.
