BBQ Pork Mozzarella Melt

Gourmet grilled cheese meets BBQ pork sandwich with Emily’s BBQ Pork Mozzarella Melt. Slow roasted pulled pork is smothered in sauce and then finished with melty mozzarella cheese.

Serves: 4



  • 8 thick slices English muffin bread or sourdough bread
  • 8 tablespoons butter, softened
  • 1 (16-ounce) Frigo® Fresh Mozzarella Cheese, cut into 1/4-inch thick slices
  • 2 cups pulled BBQ pork
  • 1 cup BBQ Sauce
  • 1 small red onion, sliced thin, optional
  • 4 leaves of lettuce, optional
  • 4 sweet gherkin pickles, optional
  • Cole slaw, optional


Preheat the broiler in your oven set to low.

Butter both sides of each bread slice. Place the slices on a sheet tray and cook for 5 minutes or until the bread is browned on one side.

Flip all the slices of bread, and top 4 slices with a slice (or two) of Frigo® Fresh Mozzarella Cheese.  Top the other 4 slices with a half cup of BBQ pork and a slice of Frigo® Fresh Mozzarella Cheese.  

Allow to bake for 5 – 7 minutes or until the cheese has melted and the BBQ pork is warmed through.

Make sandwiches by layering the BBQ pork topped bread with a few slices of red onion, lettuce, and BBQ sauce as desired.  Finally, finish by placing the bubbly, melty Frigo® Fresh Mozzarella Cheese topped piece of bread on the sandwiches and hold them shut with a sweet gherkin spiked skewer. 

Serve hot with coleslaw and more BBQ sauce for dipping!
