Baked Feta Ricotta Dips

These recipes for Baked Feta Ricotta Dips are incredibly delicious and can be executed within 20 minutes. Ingredients

Ricotta Feta Dip Base:

  • 1 (15-ounce) Frigo® Whole Milk Ricotta Cheese
  • 2 (5-ounce) Frigo® Crumbled Feta Cheese
  • 2 large eggs

Sweet Dip:

  • 2 teaspoons honey
  • 1 orange, juice and zest
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom
  • 1 tablespoon olive oil, reserve for cooking
  • 2 tablespoons honey, reserve for serving
  • Optional garnishes: Extra crumbled feta, chopped walnuts, and honey

Spicy Dip:

  • 1 (4 ounces) jar chopped pimentos, drained
  • 2 tablespoons chopped pepperoncini
  • 1 ½ tablespoon red wine vinegar
  • 1 small clove garlic
  • ¼ teaspoon harissa spice blend, or substitute ¼ teaspoon crushed red pepper flakes (or more, to taste)
  • 1 tablespoon olive oil, reserve for cooking
  • Optional garnishes: Extra crumbled feta, olive oil, harissa, crushed red pepper flakes, minced fresh herbs, and/or chopped olives

For Serving:

  • Toasted bread
  • Crackers
  • Assorted vegetables, Sliced
  • Assorted fruit, sliced

Directions

Preheat the oven to 425°F.

Make the dip base by dividing the Frigo® Whole Milk Ricotta Cheese container into two medium bowls. Fold one container of Frigo® Crumbled Feta Cheese and 1 large egg into each bowl.

Using a hand mixer on the lowest speed, mix the cheeses together. Once the feta and ricotta are combined, adjust the mixer to medium speed and whip until the cheese is soft and fluffy.

In one bowl, add all the spicy dip ingredients and, in the other bowl, add the sweet dip ingredients. Mix on medium to incorporate the ingredients.

Grease two small baking dishes (like small ramekins or cocotte pans) with olive oil and scrape the ricotta dips into separate dishes, drizzling with remaining olive oil on top.

Bake for 15 minutes or until the tops brown and puff up like a soufflé.

Carefully remove hot dishes from the oven and place on a serving platter. Garnish sweet dip with a drizzle of honey and any of the optional ingredients, and garnish the spicy dip with a drizzle of olive oil and any of the optional ingredients.

Serve with toasted bread, olives, charcuterie, nuts, vegetables, fruits, bread, crackers, and other delicious accouterments for dipping.
