Loaded Baked Potato Dip

All the savory flavors of a loaded baked potato folded into a hot bubbling cheese dip topped with bacon and chives! Serve this dip for an appetizer or serve at the next gameday party. Grab a chip or waffle fry and dig in!

Ingredients

  • 2 ½ cups shredded Frigo® Fresh Mozzarella, divided.
  • 2 cups whole milk
  • 1 cup cooked chopped bacon
  • ½ cup Frigo® 3-Cheese Italian Blend
  • 1/3 cup instant potato flakes, or substitute 1 cup cooked mashed potatoes
  • 2 tablespoons butter
  • 1 ½ tablespoons ranch powder
  • 1 tablespoon red wine vinegar
  • ½ teaspoon fresh ground black pepper
  • ¼ cup chopped fresh chives

Directions

Preheat oven to broil. 

In a medium-sized, ovenproof sauté pan, heat 2 cups of shredded Frigo® Fresh Mozzarella and all other ingredients (except chives) on medium-high heat for 6 minutes or until cheese is melted.  Be sure to continually stir the mixture with a rubber spatula, scraping the bottom of the pan to avoid burning. 

Remove from heat. Fold in the chives and top with remaining shredded Frigo® Fresh Mozzarella.

Place sauté pan in the oven on top rack and broil for 2 minutes or until cheese is brown and bubbly.

Garnish with bacon bits, chives, or Frigo® 3-Cheese Italian Blend, and serve with crispy warm waffle fries or chips.
