Spicy Pineapple Margaritas

Spicy Pineapple Margaritas are a simple 6-ingredient recipe with a smokey sweet and tangy twist!  A combination of tequila, orange liquor, freshly squeezed lime juice, sweet pineapple juice, and muddled chilies makes for a tropical refreshment for a hot summer day.

Prep Time:  3 minutes

Yield:  2 (8-ounces) cocktails

Glassware:  Collins glass, rocks glass, margarita glass

Ingredients

  • 2 slices fresh jalapeno pepper (about 1/4 inch thick each)
  • 1 dried guajillo chili peppers, cut open, stems and seeds removed
  • 4 ounces anejo tequila
  • 2 ounces lime juice
  • 2 ounces orange liquor
  • 3 ounces pineapple juice

Directions

Add 1 jalapeño pepper slice, ½ of a crushed guajillo and tequila to a cocktail shaker. Muddle with a muddler or wooden spoon and set aside for 5 minutes or so (to allow the pepper flavor to absorb into the liquor).

Fill a cocktail shaker about halfway full with ice. Add the lime juice, orange liquor, and pineapple juice. Shake vigorously for 20 to 30 seconds.

Strain into a margarita glass or serve over ice in a Collins glass. Garnish with a thin slice of pineapple, a guajillo chili, and lime.

Optional garnish: Wet the rim of the glass with lime wedge then rim the glasses with a mix of sugar, coarse salt, and cayenne pepper.
