Frozen Milk and Cereal Bars

A perfect excuse to make your favorite novelty kid cereal into a dessert and/or to make a milk and cereal solution for on-the-go, running-out-the-door breakfast. This breakfast of champions is packed with Greek yogurt, milk, cereal, strawberries, and a banana. You’ll feel great about serving them up to the kiddos, and they will enjoy their first meal of the day in a frozen dessert popsicle form!

Prep Time: 10 minutes

Freeze Time:  8 hours

Yield: 6; 9.5 ounce popsicles

Ingredients

  • 1 large banana
  • ½ cup smashed strawberries
  • 1 cup vanilla Greek yogurt
  • ½ cup whole milk, or milk alternative
  • ½ cup dry cereal

Directions

In a blender, mix all the ingredients except the cereal until pureed smooth. Add half of the cereal and turn the blender on and then immediately off (just enough to crush and incorporate some of the cereal but not pulverize).

Prepare popsicle molds (if you don’t have, make popsicles by retrofitting small canning jars and using spoons). Stir in remaining cereal by hand to avoid crushing it.

Finally, pour milk and cereal puree into popsicle molds, insert sticks, and freeze for at least 3 hours or until frozen solid.
