Winter Cranberry Salsa

A quick and easy Winter salsa recipe made with fresh cranberries, ginger, scallions, cilantro, and jalapeños. Serve alongside your turkey dinner, or enjoy as a fresh seasonal salsa with chips or on tacos.

Ingredients

  • 1 (12-ounce) package fresh or frozen cranberries
  • 1/4 cup white granulated sugar
  • 4 scallions with tops, chopped
  • 1 jalapeño pepper, seeded and chopped fine
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 cup minced fresh cilantro
  • Tortilla Chips, for serving
  • Lemon and lime wedges, for serving

Directions

Pulse cranberries and sugar in a food processor 3 to 4 times or until coarsely chopped, stopping to scrape down sides.

Add chopped green onions, chopped jalapeño pepper, grated fresh ginger, lemon juice, oil, and salt; pulse 3 to 4 times or until chopped and thoroughly mixed together.

Scrape into a medium-sized bowl and stir in chopped fresh cilantro.

Cover and chill in the refrigerator for 1 to 24 hours.

Serve with tortilla chips and garnish with lemon and lime wedges.
