Toasty Holiday Toasting Almonds

Toasty Holiday Toasting Almonds are a great party/bar mix – a little sweet and savory with a nice spice.

These nuts will be a hit at your holiday parties, or a redeeming snack in between. I love to add fresh rosemary and warm spices, so they taste like the holidays in the best way.

Cook Time: 12 minutes

Ingredients

  • 3 cups organic raw almonds (unsalted and un-roasted)
  • 3 tablespoons olive oil
  • 3 tablespoons finely chopped fresh rosemary leaves
  • 1 ½ tablespoon white granulated sugar
  • 2 tablespoons Madras curry powder
  • 1 tablespoon sea salt
  • 1 teaspoon freshly ground black pepper

Directions

Preheat the oven to 350°F.   Line a large cookie sheet with parchment paper or a slip pat mat.

In a large bowl, combine the olive oil, fresh rosemary, sugar, madras curry powder, salt, and black pepper.

Thoroughly toss the toasted nuts in the spiced olive oil until evenly coated and then spread them out on the prepared baking sheet. 

Toast in the oven until light golden brown and aromatic, about 10  to 12 minutes.

Remove almonds and allow to cool at room temperature. Store these yummy seasoned nuts in a sealed container to have available for a snack or a perfect pairing at your next cocktail mixer.

Retro Rad Tip:  The combination of rosemary and madras curry lends an irresistible flavor to toasted nuts. Pack roasted almonds or favorite nuts in small decorative canning jars tied with a ribbon for stocking stuffers or serve with some holiday cheer.
