Taco Fundito

Taco Fundido is a delicious dish of spicy chorizo sausage, seasonings, and melted cheese. It makes for a great game day dish or instant party pleaser when unexpected guests arrive!

Ingredients

  • 2 tablespoons vegetable oil
  • ½ pound fresh chorizo or spicy Italian sausage, casing removed
  • 1 cup (1 small) chopped white onion
  • 1 cup (1 small) chopped red bell pepper
  • 1 (5-ounce) container Frigo® Crumbled Feta Cheese
  • 1 cup shredded Frigo® Whole Milk low-moisture Mozzarella
  • 1 8-ounce container cream cheese, room temperature
  • 1 tablespoon hot sauce
  • 1 tablespoon low sodium taco seasoning
  • ¼ teaspoon freshly ground black pepper
  • tortilla chips or crackers for serving

Directions

Preheat oven to 400° F. Lightly oil a shallow oven-safe dish, 8-inch cast iron skillet, or casuela.

In a large sauté pan over medium-high heat, add 1 tablespoon olive oil and sausage until brown. Add onions and red bell peppers to the pan and cook until the vegetables are soft and onions are translucent, about 5 minutes. Remove from heat and pour off excess fat.

While sausage and vegetables cook, mix Frigo® Crumbled Feta Cheese, Frigo® Whole Milk low-moisture Mozzarella, cream cheese, hot sauce, taco seasoning, freshly ground black pepper in large mixing bowl and stir until thoroughly mixed. Fold into cooked sausage mixture.

Scoop into oven safe dish, place in heated oven, and bake until bubbling and lightly browned on top, about 15 minutes.

Remove from the oven, top with favorite toppings like diced tomatoes, sliced avocado, chopped cilantro, and/or slice of lime, and serve immediately with tortilla chips or crackers!
