Superfood-Fueled Breakfast Bowl

Chia seeds, fruit, ricotta, and coconut milk combine to make a hearty and healthy breakfast bowl with all the satisfying flavors reminiscent of tapioca or rice pudding. Who doesn’t love dessert for breakfast?

But, it’s an easy and oh so perfect quick healthy breakfast on the go!

Prep Time: 15 minutes

Serves: 1; 3-cup breakfast bowl

Ingredients

  • 1 cup Frigo® Whole Milk Ricotta Cheese
  • 2 tablespoons light coconut milk
  • ¼ cup fresh pineapple, diced small
  • 1 tablespoon honey
  • 2 tablespoons chia seeds
  • 2 tablespoons blueberries
  • 1 kiwi, peeled and thinly sliced
  • 1 tablespoon sliced almonds
  • 1 tablespoon unsweetened coconut flakes

Directions

In a blender or food processor, pulse the Frigo® Whole Milk Ricotta Cheese, coconut milk, pineapple, and honey until it’s reached a smoothie consistency. Then, add the puree to a cereal bowl and fold in the chia seeds.

Top with the blueberries, kiwi, almonds and coconut flakes. (Note: If you’re not consuming right away, reserve the chia pudding without the toppings in the refrigerator until you’re ready.)
