Ingredients

Ingredients:

  • 2 10-inch pie crust rounds, store-bought or homemade
  • ½ cup all-purpose flour for rolling out your dough
  • ½ cup marinara sauce, plus more for dipping
  • 1 5-ounce tub Frigo® 3-Cheese Italian Blend
  • ¼ cup Frigo® Low-Moisture Mozzarella, shredded

Optional Toppings:

  • pepperoni slices, sliced mushrooms, chopped peppers, sliced onions, olives, bacon crumbles

Directions

Preheat the oven to 400° F.  Line a baking sheet with parchment paper.

On a floured surface, roll out the pie crust and cut out circles using a 3-inch round cookie cutter or the rim of a drinking glass. Set half of the circles aside to use as the tops of the pizza pockets.

Take the remaining half of the pie crust circles and spread about 1 teaspoon of marinara sauce on each leaving a ½-inch border of crust uncovered. Place 1 tablespoon of optional toppings in the center of each circle of sauce. Top each circle with 1 tablespoon Frigo® 3-Cheese Italian Blend, 1 teaspoon shredded Frigo® Low-moisture Mozzarella, and another teaspoon of marinara sauce.

Brush the outer edge of each circle with the beaten egg.

Take the reserved circles of dough and poke a few vent holes in each, using either a drinking straw or a paring knife. Place on top of the circles of dough with toppings. Seal the circles together using a slightly smaller cookie cutter, your fingers, or the tines of a fork.

Brush the top of the pizza pockets with more of the beaten egg and sprinkle with Frigo® 3-Cheese Italian Blend.

Place the sealed pizza pockets on your lined baking sheet and bake for 20-25 minutes or until the piecrust is golden brown.

Serve warm with marinara sauce for dipping.
