Creamed Collard Greens

A delicious, comforting, and easy side dish of cheesy creamed collard greens that’s perfect for your next holiday dinner or weeknight feast.

Prep Time: 15 minutes

Cook Time: 20 minutes

Yield: 2-3 quarts

Serves: 8 – 12



  • 2 pounds shredded collard greens or 3 large bunches collard greens, center stems removed and leaves cut into ½-inch strips
  • *Or substitute spinach, kale, or Swiss chard
  • ½ teaspoon salt
  • ½ teaspoon fresh ground black pepper
  • 2 tablespoons unsalted butter
  • ½ cup (about 3 large) sliced shallots
  • 3 tablespoon all-purpose flour
  • 2 cups whole milk
  • 1 (8-ounce) package Frigo® Fresh Mozzarella Cheese, shredded
  • 2 (5-ounce) containers Frigo® Shaved Parmesan Cheese, divided
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons smoked ground paprika
  • ¼ teaspoon ground nutmeg
  • 1 cup cooked thick-cut smoked bacon, crumbled, optional
  • *Or, substitute 1 cup chopped smoked almonds


Add chopped collard greens, salt, and black pepper to a large pot over medium-high heat. Stirring continually, cook until the collard greens are wilted and most of the liquid released by the greens has simmered off, about 5 minutes.
Reduce to medium heat. Add butter and sliced shallots. Cook until the butter has melted and the shallots are tender, about 5 minutes, stirring occasionally.

Sprinkle all-purpose flour over greens to evenly coat. When flour is completely moist, stir in whole milk, shredded Frigo® Fresh Mozzarella Cheese, and 1 (5-ounce) container Frigo® Shaved Parmesan Cheese allowing mixture to rise in temperature to a simmer over medium-high heat. Simmer for a few minutes until cheese is melted and desired consistency is reached, stirring frequently.

Reduce heat to low. Add vinegar, paprika, and nutmeg, stirring for an additional 5 minutes until flavors have melded.

Taste and adjust salt and pepper as needed. Top with Frigo® Shaved Parmesan Cheese, crumbled bacon or chopped almonds, and serve hot.

Transfer into a casserole by adding the creamed collard green mixture to a 2-quart baking dish and sprinkling with the Frigo® Shaved Parmesan Cheese, crumbled bacon, or chopped almonds, and a ¼ cup seasoned panko. Bake until bubbling and lightly golden brown on top, about 15 minutes.
