Chewy Chocolate Chunk Brownies

Satisfy your chocoholic cravings with these decadent Chewy Chocolate Chunk [and sometimes nutty] Brownies!  This is a perfect base recipe to use when adding variations to a chocolate brownie recipe.  You will have a rich fudgy homemade dessert within the hour…pour a glass of milk and get ready for a treat!

Yields: 9-inch x 9-inch pan

Ingredients

  • ¾ cup unsalted butter
  • 1 ½ cups of white granulated sugar
  • ¾ cup of dark cocoa powder
  • 2 teaspoons espresso powder
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup of chocolate chips or chocolate chunks
  • ¾ cup of all-purpose flour

Directions

Preheat your oven to 350°F. Prepare 9-inch x 9-inch by lining with parchment paper and lightly grease with cooking spray.

Melt the butter in a pot, remove from the heat, pour into a large mixing bowl, and with a hand mixer beat in the sugar. Once combined, mix in your cocoa powder and espresso powder until fully incorporated.

Add in your eggs and then add in the vanilla extract, beating until just incorporated.

Once all that is mixed together add in your flour and slowly mix until just stirred in. At this point, if you are using chocolate chips instead of chocolate chunks, with a rubber spatula fold in 2/3 of a cup of the chips.

Scrape into prepared baking dish. Evenly top with remaining chips or I prefer chocolate chunks, which I spread over the top of the batter and ever so slightly press into. Because they are heavier than chips and they sink right into it. Bake at 350°F for 30-40 minutes, until the brownies pull away from the edges slightly, but are still slightly soft in the center. Cool the brownies.

Rad Tip: This brownie recipe can be jazzed up by using any type of chocolate chips, butterscotch chips, walnuts marshmallows, and/or even a few tablespoons of peanut butter and/or caramel swirled into the batter.
