Carrot Tarragon Gin Shrub

This Carrot Tarragon Shrub is an herbal vegetal cocktail that will soon become your favorite summertime sipper.  A cool and refreshing aperitif made with a homemade sipping vinegar!

Ingredients

Cocktail:

  • 1 cup carrot, shredded
  • 1 cup apricot juice
  • ½ cup water
  • ¼ cup honey
  • ½ teaspoon salt
  • 1 small handful fresh tarragon
  • ¼ cup apple cider vinegar
  • 15 ounces gin
  • 1 tablespoon honey
  • soda water

Garnish:

  • Tarragon sprigs
  • Shredded carrot

Directions

Make Carrot Tarragon Shrub, bring the carrots, apricot juice, water, ¼ cup honey, and salt to a gentle boil and simmer in a small saucepan for 10 minutes. Stir occasionally.

Remove the pan from the heat and add in the tarragon. Stir and allow to steep in the refrigerator until cools.

Strain into an American Metalcraft® Cocktail Mixing Glass and then stir in the apple cider vinegar and then prepare cocktail, by stirring in the gin and tablespoon of honey.

Fill five American Metalcraft® Moroccan Tumblers with crushed ice and pour cocktail over the ice and finish with a splash of soda water, and garnish with a sprig of tarragon and a pinch of shredded carrot.
