A healthy, vibrant fresh beet hummus makes a perfect snack enjoyed with your favorite veggies, crackers, chips, or as a spread on your sandwiches.

Yield: 5-6 cups
In the base of a food processor fitted with a blade, pulse together fresh beets, pickled beets, Frigo® Blue Cheese Crumbles, tahini, parsley, garlic, and lemon juice and zest. Pulse together until the mixture is chopped fine. Scrape the sides of the food processor and start to drizzle in the extra virgin olive oil, pulsating and scraping sides each time olive oil is added. Blend until mixture comes together into a pureed mixture.
Top hummus with Frigo® Blue Cheese Crumbles, scallions, sesame seeds, and/or toasted chopped walnuts as desired. Serve with fresh vegetables, crackers, vegetable chips, or corn chips. Enjoy!
