Emily’s Cornbread Waffles

Do you like cornbread?

 

Waffles?

 

Ever thought of mixing the two?

 

Even if you're not a cornbread person (or a waffle person), I recommend giving this recipe a try. You may be surprised to find that you LOVE it!

Ingredients:
1 cup all-purpose flour (for a gluten free version, use corn flour)
1 cup corn meal
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup sugar
1 teaspoon salt
1 1/2 cup buttermilk
1 egg

Directions:
1. Mix your flour, corn meal, baking powder, salt, and baking soda in a bowl. Set aside.

2. Beat the egg with the milk and sugar until its all incorporated. Gradually add in the dry ingredients.

3. Grease (Spray oil) a hot waffle iron and plop in about 1/2 a cup of the batter.

4. Let it cook for about 3-4 min on the iron or per your waffle maker’s instructions.

In a pinch?  Keep boxes of Jiffy corn bread mix on hand. Follow the bread directions, then add 2 tablespoons of Crisco!

Get creative.  Everything goes good with waffles!
